Brendan's Homemade Smoked Queso
This is my husband's recipe he came up with for his electric smoker. This queso is flavorful, easy to make, and delicious! Perfect to make for a family get together as there will be plenty to share!
You will need:
Electric smoker
Wood chips
Large aluminum pan
Ingredients:
2lbs mild Italian sausage
Onion powder
Garlic Powder
2 blocks pepperjack cheese (cubed)
8 oz sharp cheddar Velveta cheese(cubed)
8 c shredded queso cheese
Milk (enough to cover bottom of tray)
1-2 jalapeno peppers (chopped)
2 cans diced tomatoes and green chilies
1 can black beans
1 large red onion (chopped)
Bunch of cilantro
Directions:
Soak smoking chips in water for a few hours before using. Make sure your electric smoker has the dish of water filled up. Put wood chips in the appropriate container. The smoker will be on medium high level for around 2 hours.
Cook Italian sausage and season with garlic and onion powder. Once cooked all the way through set aside to let cool for a little bit.
In aluminum pan, combine all ingredients. The pan will be full and doesn't need to be mixed right away. As the ingredients start to smoke the cheese will melt down and be easier to stir.
Once the smoker has smoke coming out of the top, put the pan in. Check after an hour and stir the queso. Let it smoke another 30 mins and stir again. Smoke 30 more minutes and your queso is done! Enjoy!
