Homemade Beef & Mushroom Stroganoff Meal Prep

This is a super easy high protein dinner meal prep that does not take long to prepare and uses basic ingredients. Not only delicious, but a good source of fiber, calcium, iron, potassium, and vitamin c as well!



Servings: 10 meal preps


Ingredients:

  • 3 Tbsp olive oil

  • 3 cups of sliced mushrooms

  • 2 onions (chopped)

  • 20 oz. ground beef

  • 2 Tbsp minced garlic

  • 2 cans of light coconut milk

  • 2 Tbsp Dijon mustard

  • 1 Tbsp soy sauce

  • 1 Tbsp Worcestershire sauce

  • 1 Tbsp lemon juice

  • 2 Tbsp paprika

  • 2 Tbsp thickener of choice (I used corn starch)

  • fresh or dried parsley to taste

  • salt and pepper to taste

  • 2 boxes chickpea penne (8 cups)

  • 2.5 c Mexican cheese

  • 12 c (3 bags) frozen broccoli (steamed in microwave)

Directions:

  1. Add olive oil, mushrooms, and onions to a large pan. Let them brown and cook down a bit. Add the ground beef and cook over medium heat until browned.

  2. Fill a large pot with water and let it come to a boil.

  3. Steam your bags of broccoli one at a time.

  4. Time to make the sauce. In the large pan, add coconut milk, minced garlic, Dijon mustard, soy sauce, Worcestershire sauce, lemon juice, paprika, and seasonings to your taste. Mix together and let it simmer for a bit.

  5. In a measuring cup with a spout, combine cold water with corn starch. Add to the pan to help thicken the sauce. Let it simmer over low heat stirring occasionally.

  6. Once the water is boiling, add the penne, it will cook in about 6-8 minutes.

  7. Drain the penne and add back to the large pot. Dump the sauce into the pan and stir.

  8. Serve the penne with a side of broccoli and top with 1/4 c of Mexican cheese for each meal prep. Enjoy!
