Creamy Stovetop Chicken, Rice, and Veggies
This recipe is a great meal prep, meaning cook once for the week and be done. It uses all simple ingredients and does not take long to make. This recipe is healthy, filling, and easy. A great source of protein and fiber!

Ingredients:
3 lbs. ground chicken or cubed chicken breasts
4 c brown rice
8 c chicken broth
2 cans light coconut milk
10 oz parmesan cheese
1 tbsp olive oil
2 onions
3- 8 oz packages sliced mushrooms
2 green peppers
2 heads of broccoli or frozen bags
3 Tbsp minced garlic
2 Tbsp Italian seasoning
1 Tbsp poultry seasoning
1 tsp salt
1 tsp pepper
Directions:
1. If using heads of broccoli, wash and cut the florets, place in a steam basket over a pot of boiling water and cover. If using frozen broccoli steam in the microwave.
2. Add 1 tbsp olive oil to large pan. Chop onions and green peppers. Add mushrooms. Let the veggies cook down for a few minutes.
3. Next, add the chicken to the same pan. Add 1 Tbsp Italian seasoning, poultry seasoning, salt and pepper. Let the chicken cook on medium heat.
4. After the chicken is cooked through, add cans of coconut milk and 5 oz parmesan cheese to the pan. Turn the heat down to low and let the mixture simmer while waiting for the rice to cook.
5. Add the rice to a large pot. Pour the chicken broth over top and add 1 Tbsp Italian seasoning. Turn the heat on high and let the mixture come to a boil. Once it is boiling cover with a lid and turn the heat down to low. The rice will absorb all the broth and be done in approximately 30 minutes.
6. Serve the chicken and veggies with creamy sauce over the brown rice. Top with additional parmesan cheese. Enjoy!
