Homemade Blueberry Dark Chocolate Whole Wheat Pancakes š«š„š«
This recipe is my favorite for pancakes that uses all whole food ingredients and tastes wonderful! The pancakes are very filling. I like to top them with a little bit of butter and pure maple syrup and serve with a side of breakfast sausage. In this recipe, I used homemade apple butter, but this can be substituted with your favorite fruit butter or applesauce. These pancakes can also be frozen and saved for later!
Servings: 8-9 pancakes
Ingredients:
2 c whole wheat flour
2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1 3/4 c unsweetened almond milk
1/4 c apple butter or apple sauce
1 tsp vanilla extract
1 1/4 c blueberries, fresh or frozen
1/4 c dark chocolate chips
Ideas for toppings: butter and pure maple syrup, whipped cream and cinnamon, powdered sugar and fresh fruit
Directions:
Grease griddle on the stove. Combine all ingredients in a bowl and stir with spatula. Batter will be thick. Turn stove top on medium heat and use a 1/4 c to pour batter on griddle. Cook approximately 4 minutes on each side, turning often. Pancakes will be thick, so ensure they are cooked all the way through. Enjoy!
