Homemade Blueberry Dark Chocolate Whole Wheat Pancakes šŸ«šŸ„žšŸ«

This recipe is my favorite for pancakes that uses all whole food ingredients and tastes wonderful! The pancakes are very filling. I like to top them with a little bit of butter and pure maple syrup and serve with a side of breakfast sausage. In this recipe, I used homemade apple butter, but this can be substituted with your favorite fruit butter or applesauce. These pancakes can also be frozen and saved for later!


Servings: 8-9 pancakes


Ingredients:

  • 2 c whole wheat flour

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1 3/4 c unsweetened almond milk

  • 1/4 c apple butter or apple sauce

  • 1 tsp vanilla extract

  • 1 1/4 c blueberries, fresh or frozen

  • 1/4 c dark chocolate chips

  • Ideas for toppings: butter and pure maple syrup, whipped cream and cinnamon, powdered sugar and fresh fruit

Directions:

Grease griddle on the stove. Combine all ingredients in a bowl and stir with spatula. Batter will be thick. Turn stove top on medium heat and use a 1/4 c to pour batter on griddle. Cook approximately 4 minutes on each side, turning often. Pancakes will be thick, so ensure they are cooked all the way through. Enjoy!
