Homemade Butternut Squash Bread
This recipe is super easy to make and great for fall! I love the flavors of cinnamon and nutmeg! I used 1 pint of home canned butternut squash for this recipe. If this is not available to you, just peel and chop a squash into small cubes and boil until soft.
Ingredients:
1.5 c butternut squash
2 c whole wheat flour
2 eggs
1/2 c applesauce
1/4 c maple syrup
1 tsp baking powder
1 tsp baking soda
1 Tbsp cinnamon
1 tsp vanilla extract
1/2 tsp nutmeg
1/2 tsp salt
For topping: sprinkle brown sugar & nutmeg
Directions:
Preheat oven to 350 F. Grease loaf pan, 9x5 inch. Combine all ingredients into mixing bowl. Stir with spatula until a batter forms. Turn mixing bowl onto high power and mix for about 30 seconds, until all squash cubes are broken apart. Pour batter into loaf pan and sprinkle brown sugar and nutmeg on top. Bake for 65 minutes.
