Homemade Butternut Squash Chocolate Chip Cookies🍪
This recipe is super simple to make and is perfect for when you have a cookie craving but do not want those store-bought cookies with a bunch of added sugars and little nutritional value. These cookies are a healthier alternative, are soft and chewy, and taste great!
Servings: 12 cookies
Ingredients:
1 1/4c rolled oats
2 eggs
1 pint home canned butternut squash (could also substitute canned pumpkin)
1/2 c peanut butter
1/2 tsp baking soda
1/4 c brown sugar
1/2 c dark chocolate chips
1 tsp vanilla extract
Sprinkle with cinnamon before baking
Directions:
Preheat the oven to 350 F.
Combine all ingredients in a large mixing bowl. If using canned squash, just keep in mind you may have to mash it down a bit to break up cubes before continuing on to the other ingredients.
Scoop batter onto a cookie sheet by the tablespoonful, top with cinnamon, and bake for 15 minutes. Enjoy!
