Katie's Green Onion & Sharp Cheddar Corn Muffins

This recipe is super easy to throw together, and you can add whatever you want to the muffin mix for your tastes! Uses applesauce instead of oil for a lighter option and less calories.

Servings: 9 Muffins
Ingredients:
1c whole wheat flour
1c yellow corn meal
2 Tbsp sugar
4 tsp baking powder
1/2 tsp salt
1 egg
1 c unsweetened almond milk
1/2 c unsweetened applesauce
1/4 c dried green onions
1/2 c sharp cheddar cheese
Other ideas for add ins: bacon, sausage, green chilies, fresh corn, basil, cinnamon, honey
Directions:
Preheat the oven to 425 F and grease a muffin pan.
Mix all dry ingredients together, and then add the wet ingredients. Mix until a batter forms and then mix in whatever add ins fit your tastes.
Use a 1/4 c scoop and fill muffin tin. Bake for 15 minutes. Add a little butter on top and enjoy!
