Katie's Homemade Blueberry Jelly 🫐💙😁

This recipe is great for beginners who want to learn how to water bath can or anyone who loves experimenting and making things by hand! The jelly is low sugar and uses only 6 ingredients!




Supplies:

  • Water bath canner

  • Jar lifter

  • Ladle

  • Funnel

  • 6 half-pint jelly jars

  • 6 lids and rings

  • High speed blender


Ingredients:

  • 5 c fresh or frozen blueberries (I used frozen)

  • 3 c of water

  • ¼ c cane sugar

  • 1 package Sure-jell low-sugar pectin

  • Optional: 1 Tbsp butter

  • 1 c of honey


Directions:

  1. Put frozen blueberries in a blender and add 3 c of hot water. Blend until all chunks are broken up and a uniform consistency is reached.

  2. Put the mixture into a large pot and let it simmer on low.

  3. While the mixture is simmering, fill your water bath canner up with water. Heat it up on high, as it is going to take a while to reach a boil. Wash your canning jars out and keep them in the sink with hot water. (Large changes in temperature may cause them to shatter).

  4. Turn the temperature up to high for the blueberry juice and add ¼ c sugar, packet of pectin, and 1 Tbsp butter. The butter is optional, but I like to add it as it reduces any foaming. Stir the mixture constantly until it reaches a rolling boil.

  5. Once it is boiling, add 1c of honey. Continue to stir the mixture and let it come to a boil again. Once it is boiling, set a timer for 1 minute and turn the heat off when the timer is up.

  6. Take your jars, ladle, and funnel. Fill each jar up leaving around ¼ inch of headspace at the top. This recipe will fill up all 6 half-pint jars. Wipe the top of the jars off with a towel and warm water to remove any residue before placing the lids and rings on the jars.

  7. Use the jar lifter and place the filled jars into the water bath canner. Keep the lid on and once you hear it reach a full boil, set a timer for 10 minutes.

  8. Once the timer is up, turn the heat off, take the lid off, and let it cool down a bit.

  9. After cooling down for about 5 minutes, use the jar lifter and place the jars on a towel on the countertop. Leave them undisturbed for 24 hours to let the lids seal. You may hear them popping. That is a good sign.

  10. Remove the rings after 24 hours and ensure that all jars are sealed. Any that did not seal, use right away and keep in the refrigerator. Enjoy!
