Mongolian Ground Beef and Rice! Easy Meal Prep!
This recipe is super easy to make, very flavorful and perfect for large batch meal prep. I cook this recipe once and eat it for dinner the rest of the week. It's a great source of protein and veggies!
Servings: 10
Ingredients:
2 lbs. lean ground beef
4 c white rice
8 c water
1/2 c soy sauce
1/4 c corn starch
1 Tbsp olive oil
2 Tbsp minced ginger
3 Tbsp minced garlic
1/3 c beef broth
1/3c brown sugar
8 green onions
2 onions
2 bell peppers
2 bags frozen broccoli
Everything bagel seasoning
Directions:
In a medium sized bowl, mix ground beef, soy sauce and cornstarch. Let it marinate overnight in the refrigerator.
In a large pan, add olive oil, minced ginger, minced garlic, chopped onions, and chopped bell peppers. Let the vegetables cook down on medium heat.
In the same pan, add the ground beef and let it cook. Microwave your bags of broccoli to steam them.
In a large pot, add your white rice and water. Turn the heat to high and let it come to a boil. Once it is at a full boil, turn the heat to low and cover with a lid. The rice will take approximately 30 minutes to absorb all the water.
Once your ground beef is browned, add beef broth, brown sugar, steamed broccoli, and 4 chopped green onions to the pan. Let it simmer on low heat.
Serve the beef and veggies over top of rice and top with additional chopped green onions and everything bagel seasoning. Enjoy!
