Orange Cake with Pineapple Whipped Cream Frosting

This dessert is easy to make from a boxed cake mix! It is a very light, moist cake with great flavor and pairs wonderfully with some fruit on top.

Ingredients:

Servings: Makes 2- 9x9 cakes

Cake:

  • 1 box yellow or white cake mix

  • 1 can of mandarin oranges- do not drain juice

  • 1/2 c oil of choice( I use avocado)

  • 1/2 c sour cream

  • 3 eggs

Frosting:

  • 2 cups heavy whipping cream

  • 1 box instant vanilla pudding mix 3.4 oz (I used sugar free)

  • 1/4c powdered sugar

  • 1- 8oz can pineapple chunks- do not drain juice

  • Splash of almond milk

Directions:

  1. Preheat oven to 350F and grease cake pans.

  2. In a large mixing bowl, combine boxed cake mix, mandarin oranges with juice, oil, sour cream, and eggs. Mix on high until the mandarin oranges are blended into the cake batter with no remaining chunks.

  3. Pour cake batter into pans and place into the oven. Depending on the cake mix you choose, baking times will vary. Always test for doneness by inserting a toothpick into the center of the cake. It should come out clean.

  4. To make the frosting, combine all ingredients into a large mixing bowl and mix on high speed. If the frosting becomes too thick add a splash of almond milk until you reach the desired consistency. Keep the frosting in the refrigerator until you are ready to frost the cake.

  5. Once the cakes are cooled, frost them and top with additional mandarin oranges and fresh pineapple. Enjoy!
