Taco Pasta Skillet Meal Prep 🌮
This recipe is super easy to make, uses basic ingredients, and is filling and fun! This was a great meal prep for my husband and I for the upcoming work week!
Servings: 13 meal preps
Ingredients:
2 lbs. bowtie pasta
20 oz lean ground beef
1 can of red kidney beans
1 can of corn
1 can of diced tomatoes
1 yellow onion chopped
1 green pepper chopped
3 Tbsp minced garlic
4 cups of beef broth
1 can of whole Roma tomatoes
1 can of coconut milk
2 cups of cheddar cheese
1 cup of mild chunky salsa
Taco seasoning to your taste (I have a homemade recipe in another post if you search for it)
12 cups of steamed broccoli/cauliflower (I used frozen)
Directions:
Fill a large pot with water and bring to a boil. Add pasta and let it cook until tender.
In a large pan, (I used a huge cast iron pan), add ground beef, chopped onions, chopped green peppers and let it cook down a bit.
In a blender, combine a can of whole Roma tomatoes, coconut milk, and around 3 cups of beef broth. Blend on low and let it sit until needed later.
In the large pan, add the remaining cup of beef broth, canned beans, canned corn, canned diced tomatoes, minced garlic, and add taco seasoning to your tastes.
Once the pasta is tender and drained, pour it into the large pan and mix it up a bit. Add the sauce from the blender along with 1 cup of salsa. Mix this all together and let it simmer for a while.
Steam your bags of veggies in the microwave.
Optional to add the cheese directly on top of the skillet or add a little on top of the meal prep before you reheat it. I am opting to add the cheese before I reheat the meal. Enjoy!
